Melon Salsa
This will really sweeten the deal. For those who don’t necessarily like spicy, this sweet melon salsa may hit the spot. Though the recipe does not call for tomatoes, adding in 2 diced tomatoes of any variety will add color, texture and nicely deepen the flavor. Adapted from Barbara Kingsolver’s fun and useful Animal, Vegetable, Miracle.
In the farmstand: ripe melon, bell pepper, jalapeno pepper, red onion, honey, apple cider vinegar, fresh mint or cilantro
Ingredients
- 1 med ripe melon 1/4 inch cubed
- 1 bell pepper 1/4 inch cubed
- 1 jalapeno pepper minced
- 1/2 med red onion minced
- 1 Tbsp honey
- 2 tsp apple cider vinegar
- 1/4 cup fresh mint or cilantro minced, or pulsed in a food processor
Instructions
Dice melons and peppers into 1/4-inch cubes. If you choose to add tomatoes, dice those too. Mince onion and mint (or pulse them in a food processor); add to melon mix. Stir honey and vinegar into mixture. Leave mixture to sit covered at a cool room temperature, allowing flavors to marry for at least one hour. Season to taste with salt and pepper.
Yield: 6 generous servings.
