Pumpkin Cookies

The sweet flavor of pumpkin, or any winter squash, lends itself well to creating sweet treats! These pumpkin cookies are great for accompanying a fall lunch or a cozy cup of tea by the fire place. They will smell amazing as they bake, filling your house with the smell of fall!

In the farmstand: pumpkin, egg

Ingredients

  • 1 cup butter softened
  • 1 cup cane sugar
  • 1 cup pumpkin cooked and pureed
  • 1 egg lightly beaten
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice

Instructions

Cream butter and sugar using an electric or standing mixer. Add pumpkin puree, egg, and vanilla. Sift or whisk dry ingredients together and add to wet, mixing just until combined.

Drop by spoonfuls onto a parchment lined baking sheet and bake 18 minutes at 350 or until browned at the edges and toward the middle of the cookie.

Makes about 16 3-inch cookies.
