Chilled Cucumber Mint Soup
Cucumbers and mint together are wonderful, but so is avoiding hot ovens at the height of summer. Enjoy this delicious soup that doesn’t require cooking!
- 4 cucumbers
- 1-2 cups water
- 2 cups plain yogurt
- 1 garlic clove
- several fresh mint leaves
- 2 Tbsp fresh dill
- 1 Tbsp honey
- 1-2 tsp salt
- 2 scallions finely chopped (about 1/2 cup)
Peel and smash garlic clove. Pulse in food processor.
Peel and deseed cucumbers. Rough chop, then add to processor and pulse again. Add 1 cup of water, yogurt, mint, dill, honey and 1 teaspoon salt. Puree until smooth. If the puree is not the consistency you like, simply add a bit more water and puree again.
Transfer the soup to a large bowl and chill for several hours. Garnish with additional mint and dill. Enjoy!
