Chilled Cucumber Mint Soup

Cucumbers and mint together are wonderful, but so is avoiding hot ovens at the height of summer. Enjoy this delicious soup that doesn’t require cooking!

In the farmstand: fresh mint leaves, fresh dill, honey, scallions

  • 4 cucumbers
  • 1-2 cups water
  • 2 cups plain yogurt
  • 1 garlic clove
  • several fresh mint leaves
  • 2 T fresh dill
  • 1 T honey
  • 1-2 tsp salt
  • 2 scallions finely chopped (about 1/2 cup)

Peel and smash garlic clove. Pulse in food processor.
Peel and deseed cucumbers. Rough chop, then add to processor and pulse again.
Add 1 cup of water, yogurt, mint, dill, honey and 1 teaspoon salt. Puree until smooth.
If the puree is not the consistency you like, simply add a bit more water and puree again. Transfer the soup to a large bowl and chill for several hours. Garnish with additional mint and dill. Enjoy!
