Autumn Beets

Ginger & clove make this recipe a sweet and warming way to serve beets. This is a great and colorful fall side dish on a blustery grey day.

In the farmstand: beets, apple, apple cider, onions


  • 3 c beets red or gold; peeled & sliced
  • 1 apple peeled & chopped
  • 1 c apple cider
  • 6 cloves whole
  • 1/2 c onions sliced
  • 1 bay leaf
  • 1 T fresh ginger minced
  • to taste salt


Place all ingredients in a large sauce pan. Bring to a boil over high heat. Reduce heat and simmer, uncovered, 20 minutes or until beets are tender. Discard bay leaf and serve warm.
