Whether roasted or lightly toasted like these, pumpkin seeds are another wonderful way to celebrate the pumpkin. This recipe makes an excellent standalone snack and a super garnish for a soup or ice cream! Be creative and try different spices to compliment your favorite flavors. We find that keeping it simple, one or two spices, does the trick.
In the farmstand: raw pumpkin seeds
Ingredients
- 2/3 c raw pumpkin seeds remove from pumpkin or purchase raw (unroasted) seeds
- 1 t tamari or soy sauce
- 1/4 t curry powder
- to taste ground pepper
Instructions
Cook seeds in a saucepan over medium-high heat, stirring constantly, for 5 minutes. Once brown and popping, add curry. Remove from heat, add tamari. Stir, and season with pepper.
