Since this spread is often served in small amounts, it’s nice to make the seasoning assertive so that it packs a punch when you taste it. Yield: 1 cup
In the farmstand: garlic, extra virgin olive oil
Ingredients
- 1 c pine nuts soaked 30 minutes in hot water
- 1 clove garlic
- 2 T extra virgin olive oil
- 1/4 c lemon juice freshly squeezed
- 1 t mellow white miso
- 1/2 t red chili powder or cayenne optional
Instructions
Soak the pine nuts for 30 minutes in hot water (but do not cook them). Place all ingredients in a blender or Vitamix, blend at low speed until combined and smooth. Adjust seasonings if necessary.
