Irish Cabbage Soup

This hearty potato and soup will warm you up on a chilly evening. Makes 6 servings.

*adapted from Favorite Recipes for Soups and Stews (1967)

In the farmstand: potatoes, carrots, pepper, onion, cabbage, fresh thyme, half and half

Ingredients

  • 2 med potatoes peeled & diced
  • 2 carrots chopped
  • 3 c boiling water
  • 1 bay leaf
  • 1/2 t pepper
  • 1 med onion chopped
  • 1 med cabbage shredded
  • 1 t fresh thyme
  • 1 1/2 t salt
  • 1 c half and half

Instructions

Add potatoes, onion, carrots, and cabbage to boiling water. Add thyme, bay leaf, salt, and pepper. Bring to a boil, then simmer about 45 minutes, or until vegetables are tender but not mushy. Before serving, add half & half and heat, but do not boil. Serve hot.
