The tartness of the cranberry is balanced by the sweetness of the beets and apple (or orange) juice.
In the farmstand: beets, apple juice
Ingredients
- 2 1/2 c beets peeled & diced
- 1/2 c apple juice or orange
- 1/3 c fresh cranberries chopped
- 1/2 c water
- 3 T sugar
- to taste salt
Instructions
Combine beets, water, juice, & sugar in a sauce pan. Bring to a boil over medium heat, stirring until sugar dissolves. Reduce heat and simmer, uncovered, until beets reach desired tenderness, about 20 minutes. Add the cranberries and salt. Simmer uncovered for an additional 5 minutes.
