Field Notes Memorial Day Weekend marks the unofficial beginning of the summer season and the official start of our Summer CSA! The field crews are busy planting and harvesting. Anna and the farmstand staff are keeping the shelves stocked with those fresh veggies, while Alison and her kitchen assistants are turning spring harvests into amazing treats. People of all ages are coming to the farm to learn- from busloads of kids helping Megan and Cat remove field blankets to our sold-out foraging and wild edibles class last weekend. This is a wonderful time to be on the farm!

Riverside Middle School in Springfield helped our crew fold up enormous field covers (typar) as a part of their farm visit!
First Summer CSA pickup has arrived! We are excited to welcome new and returning CSA members to the farmstand, and to bring our new workplace drop-off members their pre-packed shares. Each week we will email you the list of items you will find in your share, a recipe featuring at least one of those items, as well as a few updates and goodies that will be available at the farmstand. Thanks for supporting local organic agriculture.
Farmstand Highlights Arugula, baby greens, lettuce, radishes, green garlic, spinach, salad mix and scallions are in steady supply. Other crops are beginning to come in, so check our homepage next week for availability. Strawberries are beginning to trickle in, so get here early to be one of the lucky few that get to take home a pint! The berries in the field are looking good, and the supply should become more steady over the next few weeks.
Fresh From the Kitchen Try Alison’s Arugula and Almond Pesto, Lentil Feta Salad with Lemon Tarragon Dressing, White Pine and Almond Cookies with Rhubarb Rosewater Jam & Coconut Date Bars (grain free!).
Recipe Arugula Quesadillas made with fresh arugula, pesto & goat cheese are just the thing for a late spring dinner. Fresh spinach, arugula pesto and organic Queso Fresco from the Champlain Valley Creamery, available in the farmstand, are also delicious quesadilla fillings. Garden Tip Memorial Day weekend is the traditional marker of frost-free weather! Here are Cat’s tips for transplanting your tender annuals. We still have a womderful selection of flowers, herbs and vegetables for your garden, and CSA members get a discount!
